Sweet Potato Hot Honey Ground Beef Bowls

I finally took the leap and made a version of the viral hot honey ground beef macro bowls with cottage cheese, sweet potatoes and sliced avocados, and let me tell you, they definitely lived up to the hype! I sprinkled mine with this everything bagel seasoning and scooped it all up with tortilla chips.
Not only is this bowl recipe basically how the team and I have been eating lunches on those days that we seemingly only have random ingredients in the studio fridge for YEARS, but the flavor combo is actually legit, and the macros can’t be beat — I’m talking 34g of protein per bowl!

-
Toss the sweet potatoes in olive oil and season with salt and pepper. Air fry at 400°F for 10-15 minutes or until fork tender, shaking halfway through.
-
Heat a large skillet over medium high heat. When hot, add the ground beef, break up into small chunks, and add the taco seasoning. Cook until browned, 5-7 minutes, stirring occasionally. Remove from heat, and set aside.
-
Assemble the bowls. Evenly distribute the ground beef, sweet potatoes, cottage cheese and sliced avocados.
-
Top with hot honey and everything bagel seasoning, if desired.
-
Enjoy immediately.
